Master Chef Masaaki Miyakawa, one of the elite few sushi chefs to have earned three Michelin stars, brings his celebrated craft to Raffles at Galaxy Macau with Sushi Kissho by Miyakawa. This inaugural restaurant outside Japan offers an exceptional omakase dining experience, featuring traditional Edomae-style sushi elevated by the finest seasonal ingredients sourced from Japan’s tightly-guarded legacy growers and family fishermen.
Prepared by Miyakawa and his team of chefs with 98 years of combined expertise, each pristine piece of sushi is a testament to quality and authenticity, served in serene, minimalist surroundings.
"Kissho" signifies good fortune in Japanese, reflecting the blessings of nature in each handmade sushi piece. Miyakawa’s philosophy emphasizes the importance of seasonal ingredients, ensuring every fish is at its freshest and most flavorful. This approach creates a dynamic omakase menu that highlights the rich diversity of Japanese flavors and ingredients, offering a unique dining experience with each visit.
For Miyakawa, sushi is not just a dish but an art form that captures the essence of Japanese culinary traditions. "Mastering the moment" is his guiding principle, focusing on perfecting each piece of sushi. This meticulous attention to detail, combined with his zen-like approach, aims to deliver an exceptional meal for every guest.
Sushi Kissho by Miyakawa offers an intimate setting with just 10 seats at the carved Kiso Hinoki Cypress sushi counter and a private dining room accommodating another 10 guests. Both arrangements allow diners to engage with the chefs, witnessing the culinary mastery up close. Every element is designed to provide an exclusive and memorable dining experience.
